Notes / Commercial Description: Think of a galaxy forward Fluctuation plus Other Half’s Dream treatment. A fluctuation from beta brain waves to alpha and theta waves shifts your consciousness from alertness, cognition, and concentration to a dream state of relaxation, visualization, creativity, intuition, and vivid visual imagery. Sam from Other Half came up to brew with us and we discussed potential synergies between our two heavily hopped styles. We ended up taking EQs fluctuation grain bill and adding oats and (for the first time in EQ commercial application) lactose in-line with Other Half’s Dream treatment. This beer was followed by an aggressive dry hop of Galaxy and Citra.

Dream Wave Fluctuation pours a hazy glowing tangerine color releasing aromas of passion fruit, peach, lactose, and pineapple all integrated with a juicy twist. The taste is a smooth a bright creamy tropical wave of flavor with a touch of sweet that is dangerously drinkable and balanced.

Notes / Commercial Description: A mathematical model uses a system of equations to simplify and represent reality. It allows for the identification and optimization of important process to achieve a desired flavor profile faster than trial and error alone. To construct a mathematical model, you must identify your Control Volume and the relevant mass fluxes. This will govern how concentrations evolve over time and ultimately yield the final concentrations in the glass that drives the flavor profile.

Control Volume (8.1% ABV) is the first release in a mini series that will help us upscale and apply the small scale discovery we announced with dHop14. Based on the the preliminary modeling efforts, we’ve tried a new yeast strain for the first time based on certain properties and ran it through our evolving process. Control Volume pours a glowing tangerine color. It’s highly aromatic releasing notes of fruit punch, citrus, orange, and slight bubblegum. The taste follows the nose with a soft juicy mouthfeel and firm bitterness for balance.

Notes / Commercial Description: The philosophy behind this beer is to create a wonderful drinking experience in this very moment, right here and right now. When you become present and let go of resisting what is, and not give place to thoughts about what happened or what might happen, you may find yourself content and really enjoying your beverage and the people and place around it.

We took our house wild “Honey Badger” culture (no saccharomyces) and allowed it to ferment and sour over several months before refermenting it with additional select Brettanomyces from our farmhouse cultures along with blackberry, raspberry and boysenberry at more than double the rate of fruit we use for There and Back Again. The result is a berry blast smoothie with a meaty fruit taste and a drinkable pleasant dryness boosted by our microorganisms. The beer is unfiltered, naturally carbonated and will continue to evolve over time if properly cellared.

Shook Ones is a blend of three of our favorite hops with an intense rate of kettle and dry hop additions. It pours bright yellow and has a taste of mixed tropical and citrus fruits, candied orange, underlying dankness, with a hint berry. It finishes smooth due to the use of oats and white wheat.

Collab with District 96 Beer Factory. Sexual Fluctuation is a Citra/Galaxy blend. It pours a hazy tangerine orange and releases releasing aromas of passion fruit, peach, lime, and pineapple all integrated with a juicy twist. The taste is a bright creamy tropical sorbet flavor that is dangerously drinkable and balanced. This beer takes dHop5’s lunch money and gives it a wedgie.

7 Tips to Know When Visiting Equilibrium Brewery

After a few visits to Equilibrium Brewery in Middletown, NY we decided it was time to write our 7 Tips to Know when visiting EQ. These tips are meant for you to have a better experience while visiting Equilibrium not a review of EQ. IMG_4272

  1. Location: 22 Henry St. Middletown, NY
  2. Parking: Parking is available on the side and behind Equilibrium Brewery and there seems to be plenty of parking around the brewery.
  3. Atmosphere:  Having only visited on a Saturday for can releases, we can’t answer to a week day at the brewery. However, Saturday is the day to visit Equilibrium Brewery. Upon arrival you will be issued a ticket. This is your spot in line. You can leave the site and come back at open or stay for the beer share. During our visits we enjoyed numerous shares with people cracking beers and putting them on the designated table for others to enjoy. There is strict policy that you must drink within the fenced area. Also available on Saturday are delicious breakfast sandwiches whipped up by Joe. We went with the full meat attack sandwich which included bacon, ham, and sausage. IMG_4273The only thing Joe asked is that you tip him. This helps him cover the expense of food. Trust us you will want a sandwich! At 11:30 the garage doors open and beer sales begin. You will want to make sure you find your spot in line before this time. If you plan to purchase merchandise or crowlers you can do this at the far garage door.
  4. Pets/Kids: During our visits we’ve noticed dogs and kids of all ages. However, we’ve never visited during weekday or Sunday hours.
  5. Take Home Beer: On Saturday you can take home tons of beers offered by Equilibrium. They usually have case limits but those can change depending on demand. During the week and on Sunday they offer what is leftover from Saturday’s release.
  6. Food: As mentioned on Saturday you can grab a sandwich from Joe. On other days, the brewery doesn’t have food available.
  7. Hours: Thursday 4pm-8pm, Friday 4pm-8pm, Saturday 11:30-6pm, and Sunday 11am-3pm

There And Back Again is a tale of a spontaneous fermentation, isolation, confiscation, rejuvenation, mutation, and finally perturbation. This sour American Wild Ale is a collaborative effort with our dear friend Dr. Jason Rodriguez. We took our house “honey badger” mixed culture (no saccharomyces) and allowed it to ferment and sour over several months before refermenting it on apricots and peaches (> 2lbs of fruit per gallon) for additional months. The result is a bright stone-fruit character boosted by the tropical expression of our microorganisms. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.
