1 1/2 teaspoons freshly, ground black pepper
1 1/2 teaspoons ground cumin
1 1/2 teaspoons paprika
1 teaspoon cayenne pepper
2 tablespoons Kosher salt, plus more
4-5 pounds untrimmed flat-cut Brisket
2 medium onions, thinly sliced
1 12oz can lager beer
