Pulled Pork with Cherry Chipotle BBQ Sauce

Pulled Pork
1 (4 pound) Pork Shoulder Roast
2 tablespoon coarse salt
1 teaspoon pepper
1 tablespoon canola or vegetable oil
1/2 cup beer, stock, water or soda like Ginger Ale
Buns for serving

Cherry Chipotle BBQ Sauce
1 1/2 cups fresh bing cherries, pitted and chopped
2/3 cup ketchup
2/3 cup water (or beer)
1/4 cup honey
3 garlic cloves, minced
2 chipotle peppers in adobo sauce, minced
2 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
1 tablespoon of adobo sauce from can of chipotles
1 teaspoon Worcestershire Sauce
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon freshly ground pepper
